One Pot Meals – Greek Style Chicken & Rice Pilaf
Greek-Style Chicken & Rice Pilaf Family-Size Meal – A delicious Greek dish that is so easy to make, it will be one of your favourite go-to meals! The flavour of fresh lemon and traditional Greek herbs and spices, make this dish amazingly scrumptious! Tender, juicy, Greek-style chicken on a bed of creamy, lemony rice, topped with fresh chunks of crumbled feta cheese and fresh squeezed lemon juice will have your taste buds choosing this favourite Greek dish more than once a month!
Makes 6-8 servings.
What you will need:
- 8 chicken thighs
- 2 Tbsp Butter1
- 3 Tbsp Olive Oil2
- 2 Lemons
- 2 Cup Water
- 1 Cup Feta Cheese,3 crumbled into larger pieces
- salt and pepper to taste
Wash and pat-dry chicken. In large re-sealable bag, drizzle chicken with olive oil; add salt and pepper to taste. Seal and shake to coat.
Place chicken in a large pan over medium heat; cook until golden brown and crispy (about 6 min. each side). Remove chicken and set aside.
In same pan, add butter, seasoning packet with rice, water, juice of 1 lemon; stir well. Add chicken and bring to a boil. Reduce heat, cover and simmer for 15-20 min, or until rice is done (add more water if necessary). Remove from heat; add juice of 2nd lemon. Sprinkle with chunks of feta cheese. Cover and let stand for 5 min. Enjoy!
Side Dish Suggestion: Serve with fresh Greek salad and a baguette4 OR with grilled zucchini sprinkled with freshly grated Bothwell Parmesan Cheese5
